Matcha Coconut Chia Pudding
This chia pudding is perfect if you do not like making breakfast in the morning. Prep this the night before and when you wake up just grab and go! It is also great to keep in the fridge as a quick snack when hunger hits. You will get all of the amazing benefits of matcha green tea, along with protein, fiber and healthy fats. It is perfect in the morning because it keeps you full longer and the matcha helps wake you up (without the crash)! How I did this chia pudding below.
Matcha Coconut Chia Pudding
Servings: 3-4
Prep Time: 5 min
Wait Time: 6-10 hours
Ingredients:
1 can light unsweetened organic coconut milk
1/4 cup unsweetened almond milk
1/2 scoop vanilla whey protein powder
1/4 cup chia seeds
2 tbs unsweetened shredded coconut
2 tsp pure matcha green tea powder
1-2 tsp maple syrup or honey to taste
Instructions:
Add almond milk and protein powder to a shaker cup and shake until dissolved.
Pour protein mixture into a mason jar with all other ingredients, seal the lid and shake until combined. Refrigerate overnight, or for at least 6 hours.
In the morning you can eat it as is, or blend it in the Vitamix to give it a smoother consistency (I personally like it blended better, more like velvety pudding). Top with shredded coconut, granola or sliced banana and enjoy!
