Raw Banana Carrot Cake Bites

I absolutely LOVE energy bites. They come together in minutes, are customizable, and are full of ingredients you can feel good about snacking on. I make a batch at the beginning of every week and keep them in the fridge for whenever I want a sweet treat or need a pick-me-up. These Raw Banana Carrot Cake bites are no exception. They are soft and chewy and everything you want in a little afternoon snack. The best part: they have veggies in them and NO added sugar! If you have an overripe banana that needs to be used, whip these babies up to keep in your fridge this week!

 

Raw Banana Carrot Cake Bites

Makes: 14-15 balls

Total Time: 10 minutes

Ingredients:

  • 3/4 cup walnuts, chopped

  • 1 large overripe banana, chopped (if your bananas are smaller I would use two)

  • 3/4 cup garden carrots, peeled & finely shredded

  • 1/4 cup coconut flakes

  • 1/4 cup coconut flour

  • 2 medjoool dates, pitted

  • 1 tsp coconut oil, melted

  • 1/2 tsp cinnamon

  • 1/2 tsp pure vanilla extract

  • pinch cloves

  • pinch nutmeg

Instructions:

  1. Add all ingredients to a food processor and blend until mixture is combined and has a sticky texture. If you were to pinch it between your fingers it should stay together.

  2. Take the mixture out of the food processor and shape into 14-15 balls. Store in an airtight container in the fridge.
