Healthy Tangy Dill Dip
Part of my Sunday meal prep is cutting up raw veggies to have in the fridge during the week. I usually cut up some assortment of cucumbers, broccoli, cauliflower, carrots, mushrooms and peppers. It's an easy way to make sure I am getting my veggies in and an easily available snack when hunger strikes! When I'm hungry, I'm hungry, and all I want to do is open the fridge and grab whatever is most convenient. These pre-cut veggies are the perfect option. I have to admit that plain raw vegetables aren't necessarily my favorite thing to consume. Most store-bought dips I found though have added sugar, unhealthy fats and are expensive! I wanted to come up with my own that was full of real ingredients and tasted kind of like dill pickle chips. Why dill pickle chips? Because I LOVE them. I find this dip takes away my craving for the chips (sometimes)!
This dip is so easy to make and tastes even better when you let it sit in the fridge for a few hours before eating it. The best part is it also doubles as a salad dressing! I love having it in the fridge at all times now. It's full of healthy fats, thanks to Chosen Foods avocado oil mayo. Regular mayo's first ingredient is usually vegetable oil, which I have mentioned in previous posts is really not good for you. I'm trying to limit it wherever I can, and was SO happy to find this avocado oil mayo at Costco. They also carry sprouted grains and sugar-free marinara, definitely staples for us. Costco is stepping up their health food game and we love it! Anyways, if you can't find avocado oil mayo you can use regular mayo, but keep your eye out for avocado oil mayo if you can. I also use full-fat Greek yogurt because it has less additives and is more natural than 0%. The closer you can get to the original product the better! Don't be afraid of healthy fats, they keep you full longer and are fuel for your brain. See how I made this dip below!
Healthy Tangy Dill Dip
Makes: ~ 1 cup
Ingredients:
1/2 cup plain full fat Greek yogurt
1/4 cup avocado oil mayo (I buy the Chosen Foods brand from Costco)
1 tbs dried dill
1 tbs dried onion
1 tbs parsley
1 tbs lemon juice
1 tbs white vinegar
1/2 tsp sea salt
Instructions:
Mix all ingredients in a bowl.
Store in the fridge in an airtight container until ready to use. The longer it marinates the better it is!
