Date Cashew Protein Bites
I found myself low on snacks and forgot how easy energy bites are to throw together! I used a few things I already had on hand and they turned out amazing. Everly can't stop asking for these little "balls", and I feel totally fine letting her snack on them all day!
The best part about energy bites is that they are so customizable. If you don't have any of the ingredients below, just substitute it for something similar and they should still turn out great. Let me know if you try any variations in the comment section!
These are grain-free, gluten-free, dairy-free and refined sugar-free. They come together in a few minutes and are best once they have been refrigerated. I love the addition of the plant protein because they keep you full longer and are great for a post gym snack! See how I made these below.
Date Cashew Protein Bites
Makes: 20 bites
Time: 10 minutes
Ingredients:
10 medjool dates, pitted
1 cup unsalted cashews
1/4 cup Manitoba Harvest vanilla plant protein powder (you can use any protein powder here)
1/4 cup buckwheat groats
1/4 cup unsweetened shredded coconut
1/4-1/2 cup water
Instructions:
Blend all ingredients in a food processor until combined.
Add more or less water so you get to a sticky consistency.
Roll into balls and store in the fridge.
